Keto Buffalo Chicken Casserole


If you are a buffalo chicken fan, you’re going to love this one!! Low in carbs and big on flavor! I used a cooked rotisserie chicken for a super easy weeknight meal!


Here’s what you need:

3 cups cooked chicken, cut up ( I used a cooked rotisserie chicken)

2 cups cauliflower rice prepared as directed

4 oz cream cheese

1 t minced garlic

1/4-1/2 cup Frank’s Red Hot sauce (depending on your taste)

3 T heavy cream

1 cup shredded cheddar cheese


Preheat the oven to 400. Cook cauliflower rice as directed. In a large skillet, stir together the cream cheese, garlic and hot sauce over medium heat until the cheese is melted. Add in the cut up chicken and cauliflower rice. Stir well. Spray a 8x8 baking dish with cooking spray. Spread the chicken mixture in the bottom of the dish. Drizzle with the cream and top with the cheddar cheese. Cook uncovered for 25-30 minutes until the cheese is nice and brown. Enjoy!
