Low Carb Garlic Parmesan Chicken


Oh man, this was so good! This chicken is simple and full of flavor! You probably have the simple ingredients to make this soon! Trust me, you won’t be sorry! I served it with sautéed cauliflower rice and sautéed spinach.


Here’s what you need:


2 large chicken breasts, cut horizontally to make four cutlets, I pounded them out thin


1/2 cup shredded or grated Parmesan cheese. ( I used a mixture of both)


1 t Italian seasoning

1/4 t garlic powder

salt and pepper to taste

2 T butter

Riced cauliflower to serve


Prepare chicken. Place the cheese, Italian seasoning and garlic powder on a plate and stir to mix. ( I left out a little Parmesan for garnish). Mix together. Salt and pepper each breast cutlet, then dredge in the Parmesan mixture on both sides. In a large non-stick skillet, melt the butter over medium-high heat. Brown the chicken on both sides for 3-4 minutes per side, or until they reach an internal temperature of 165. Remove the chicken and turn heat to medium. If you are using the cauliflower rice, quickly saute it in the same skillet and lightly salt. Serve the chicken over the rice with the extra Parmesan to garnish. I also quickly sautéed a couple of handfuls of fresh spinach to go with it. Enjoy!
