Low Carb Zucchini Pizza Bites


Man oh man, did these satisfy the pizza craving! The whole family loved these! Quick and easy to make too! The zucchini is the “crust”! Go ahead and indulge! They’re good for you! And delicious!


Here’s what you need:

3 small, or 2 large zucchini, sliced into 1/4 inch slices

1 T olive oil

salt to taste

1 T Italian seasoning

1/4 cup grated Parmesan

1 cup marinara sauce

1/3-1/2 cup pepperoni slices, chopped

1 cup shredded mozzarella

fresh basil to garnish


Preheat oven to broil. Heat the olive oil in a large skillet. Working in batches, brown the zucchini slices on each side about 2 minutes per side. Transfer them to a baking sheet. Salt them to taste. Sprinkle them evenly with the Italian seasoning. Next sprinkle on the Parmesan, top with marinara, pepperoni, and mozzarella. Broil for 2 minutes or until the cheese is melted! Garnish with fresh basil. Enjoy!
