Margaret’s Sweet Potato Casserole
Well I have had several requests for sweet potato recipes for Thanksgiving and I have to tell you.. it doesn’t get any better than this! This is my Mother in Law, Margaret Jarvis’ recipe that she makes every Thanksgiving and it is to die for! Hope you enjoy it as much as we all do!
Here’s what you need: (serves 8-10)
3 cups cooked and mashed sweet potatoes
1/2 stick butter, melted
1 cup sugar
1 cup shredded coconut (optional)
1 t vanilla
Preheat oven to 325. Mix all these together and pour into a greased casserole dish
1/2 cup flour
1 cup brown sugar
2/3 stick butter
3/4 cup chopped pecans
Mix the flour and sugar. Cut in the butter. Add the pecans and sprinkle over top of the potato mixture.
Bake at 325 for 30-45 minutes.
