Mexican Summer Veggie Saute


Fresh sweet corn, tomatoes and zucchini are all in-season right now, and this absolutely scrumptious side dish really shows them off! This dish would make a great addition to any cookout or summer meal! This was whipped up in about 15 minutes and it was enjoyed by the whole family. The addition of taco seasoning, gives this a unique and satisfying flavor that will have you putting this on your "must make again" list! Enjoy this celebration of summer soon!


Here's what you need: ( Serves 5-6)


Fresh corn kernels from 4 ears of corn

2-3 zucchini, sliced lengthwise, then sliced in half-circles

1/2 cup cherry or grape tomatoes, halved

1 small onion, diced

3 T butter

2 green onions, sliced

3 t taco seasoning


Heat the butter in a skillet or large saute pan. Add the onion and zucchini. Saute on medium-high heat for about 10 minutes or until tender. Stir in the corn kernels, tomatoes, taco seasoning and green onions. Saute another 5 minutes, or until it is all tender and the tomatoes are slightly blistered. Season with a little salt and pepper if desired. ENJOY!!
