Mom's Easy Chicken Tetrazzini


When I was growing up, Mom made this yummy chicken tetrazzini. It is so delicious! I tweaked it just a tad to make it even easier. I used a rotisserie chicken from the store, but you can cook the chicken and cut it up. Either way, it is simple and so good!


Here's what you need:

1 Rotisserie chicken meat shredded (or about 3 cups cooked chicken, cut up)

1 T olive oil

1 small onion, finely chopped

1/2 t minced garlic

1 10 oz. can sliced mushrooms, drained

1 can cream of mushroom soup

1 1/2 cup chicken broth

1/4 cup dry white wine

salt and pepper to taste

grated parmesan for topping

sliced or slivered almonds for garnish

fresh parsley for garnish

Your choice of pasta to serve ( I tried it served with cauliflower rice and it was amazing!)


In a large pan or skillet, heat the oil on medium-high heat. Saute the onion and garlic till soft. Stir in the chicken, mushrooms, soup, broth and wine. Salt and pepper to taste. Allow to simmer for at least 15 minutes. Serve over your choice of pasta noodles. Sprinkle generously with grated parmesan and sliced or slivered almonds and parsley. (Like I said earlier, I tried it on cauliflower rice and it was great! )
