One-Skillet (Kid-Friendly!) Pepperoni Chicken


It's always good when you come across a healthy recipe that is also scrumptious and kid-friendly....oh, and made in one pan! Well, here it is! This is not only kid-friendly, it is anyone-friendly, especially if you are a pepperoni lover. I used turkey pepperoni, but you can use regular pepperoni if you want. I served this over pasta for my boys, but I enjoyed it with no pasta. Either way, it is delicious! I used thin chicken breasts, about 1/4-1/2 inch thick. Enjoy!




Here's what you need: (4 servings)


4 chicken breasts, boneless, skinless, 1/4-1/2 inch thick

1 T olive oil

Salt and pepper to taste

16-20 slices pepperoni (regular or turkey), chopped coarsely

1/2 t minced garlic

1 t Italian seasoning

1 jar of your favorite marinara sauce

1 cup shredded mozzarella cheese

Chopped fresh basil or parsley to garnish


Preheat the oven 400. In an oven-proof pan or skillet, heat up the olive oil. Add the chicken breasts, seasoning lightly with salt and pepper. Brown on each side for about 3 minutes per side. Remove the chicken and set aside. In the same skillet, add the chopped pepperoni, garlic and Italian seasoning, scraping the bits of yummy off the bottom of the pan. Saute on medium-high for about one minute, then pour in the marinara sauce. Stir well. Add the chicken breasts back into the skillet, spooning sauce over each breast. Place the skillet in the oven, and cook for about 10 minutes or until the chicken reaches an internal temperature of 165. Top evenly with the cheese and pop the skillet back in the oven for a minute or two, until cheese is melted. Serve with your choice of pasta, or not, and top with fresh basil or parsley. YUM!
