This is so good! I was inspired by a local meal prep business called Keto to Go for this yummy dish! This is my own version, but after trying theirs, I thought I would give it a try!
Here’s what you need:
4 chicken breast, about 6 oz each
2 t olive oil
1 t garlic powder
1 t Italian seasoning
1/2 t salt
2 cups shredded mozzarella
1/4 cup Parmesan, grated
32 slices of pepperoni
1 jar of pizza sauce, or marinara sauce about 1 1/2 cups
Preheat oven to 375. On a cutting board, cut a slit in the side of each chicken breast, to make a pocket. Drizzle each chicken breast with the oil, and sprinkle each one evenly with the salt, garlic powder and Italian seasoning. Place 1-2 T of the pizza sauce and 1/4 cup of the mozzarella in each pocket of each chicken breast along with four pepperoni slices. Lay them in a baking dish. Spread the rest of the pizza sauce on top of each one. Top with the remaining mozzarella, Parmesan and pepperoni slices. Bake uncovered for 30-40 minutes or until the chicken reaches an internal temperature of 165. Enjoy!
