Poppyseed Chicken Salad

This is a light, refreshing chicken salad you can make up ahead for some lunches this week, and it is amazing! I used poppyseed dressing in it and it gave the salad a wonderful savory and sweet flavor that I just love! I used a rotisserie chicken for this to make it super easy, but if you have leftover cooked chicken from another meal, or just want to cook some, 2 to 2 1/2 cups of chopped, cooked chicken will work.


Here's what you need:


2 to 2 1/2 cups cooked chicken, cut up ( I used rotisserie chicken)

1 cup red grapes, halved

1/4 cup sliced almonds

2 T dried cranberries (Craisins)

1 large stalk celery, diced

1/3 cup poppyseed salad dressing, (extra, if needed)


Mix all ingredients together.. Add more dressing, if needed, 1 tablespoon at a time until your salad is the consistency you like. Enjoy on a bed of greens, or on a sandwich.
