Mmm! Hungry for chicken fajitas but you’re short on time? This is the way to go! I love my traditional grilled and sautéed chicken fajitas, but this is a super fast, easy version that’s perfect for a busy weeknight! All in one pan!
Here‘s what you need:
3-4 boneless chicken breasts, cut into 1 inch pieces
4 bell peppers, any color, cut into 1 inch strips
2 T olive oil (or canola)
1 onion, chopped or sliced
2-3 t Taco seasoning (to taste)
1 t chili powder
1 t cumin
1 t garlic powder
juice of one lime
chopped cilantro to garnish
Preheat oven to 375. Put the chicken and veggies in a large mixing bowl. Stir the oil in to coat it all. Sprinkle on all the seasonings and stir well. Transfer it all to a baking sheet, spreading it out to an even layer. Cook at 375 for about 20 minutes or until the chicken is cooked and veggies are tender. Squeeze the lime juice all over it and top with fresh cilantro. Serve with your favorite fajita fixings! Enjoy!
