Rotisserie Chicken Chili


No idea what to make for dinner? Stop by the store and pick up a cooked rotisserie chicken and whip up this absolutely delicious chicken chili! Perfect for a cold night!


Here’s what you need:

2 T olive oil

1 onion chopped

1 jalapeño, seeded and minced

1 small can mild green chili’s ( not drained )

4 cloves garlic, minced

1 T cumin

1 t dried oregano

1/4 t red pepper flakes

4 cups chicken broth

1 rotisserie chicken, deboned and chopped

3 cans white beans drained (cannellini beans)

1/3 cup chopped fresh cilantro

Juice of 1 lime


**Optional garnishes: cheese, tortilla strips, chips, sour cream, lime wedges, diced avocado


Place one can of the beans in a food processor with a splash of the broth and pulse till smooth. Set this aside. In a soup pot heat the oil. Sauté the onion, jalapeño, chilis, and garlic. Cook until the vegetables are soft. Add the seasonings. Stir. Add the chicken, beans, broth and beans from the food processor (these act as a natural thickener). Stir in the lime juice and cilantro. Bring to a boil then reduce to simmer. Simmer for at least 15 minutes before serving. Serve with any of the optional garnishes! Yummy!
