Rotisserie Chicken Tortilla Soup


We have a big cooking week ahead of us so we need something super simple this weekend! So that’s why I made this easy Tortilla Soup made with rotisserie chicken. It literally has 7 ingredients! So easy but perfect for a cold, gray day like today!


Here‘s what you need:

1 rotisserie chicken, meat shredded

1 can black beans, drained and rinsed

1 can pinto beans, drained

1 small bag frozen whole kernel corn

1 jar salsa ( chunky style)

32 oz chicken broth

1 pack taco seasoning

*Garnishes: lime wedges, fresh cilantro, shredded cheddar cheese


Mix all the ingredients in a soup pan, besides the optional garnishes. Bring to a boil then lower heat to low and allow to simmer about 30 minutes to an hour. Squeeze the juice of one lime in at the end if you like. Top with cheese and fresh cilantro to serve .
