Sesame Chicken Stir Fry

Ready in less than thirty minutes, this savory dish is great for a weeknight! I love the sesame flavor! I served this over thin rice noodles, but any kind of rice would be great too.

Here’s what you need:

2 T sesame oil

1 T olive oil

1 - 1 1/2 lb chicken tenders cut up into bite sized pieces

1 T minced ginger

1 t minced garlic

8 oz package of fresh snow peas OR sugar snap peas

3 cups broccoli florets

3 T lower sodium soy sauce

juice of one orange

1 T cornstarch mixed with 3 T cold water

a little extra sesame oil to finish

crushed red pepper flakes to garnish

toasted sesame seeds to garnish

*Rice or rice noodles to serve

In a large skillet heat 1 T of the sesame oil and olive oil on medium-high heat. Add the chicken pieces and allow to brown on all sides, stirring until it’s cooked through. Remove chicken and set it aside on a plate. In the skillet heat the remaining sesame oil. saute the garlic and ginger for a few seconds. Add the broccoli and the peas. Sauté for a couple of minutes until crisp tender. Stir in soy sauce and orange juice. Allow to simmer for one minute. Stir in the chicken. Stir the cornstarch mixture into the stir fry to thicken the sauce. Finish with a drizzle of sesame oil if you like. Garnish with the sesame seeds and red pepper flakes. Serve and enjoy!
