Smoked Sausage (or Ham) and Potato Soup


Do you have any leftover ham from the Easter weekend? Try making this hearty and delicious potato soup! I used turkey smoked sausage, but you can use leftover cooked ham or smoked kielbasa. It's full of yummy veggies, but you can leave out what you don't want or add something you do want...just make this your own!


Here's what you need:

12-16 0z turkey smoked sausage, smoked kielbasa, or cooked ham, cut into cubes

6 medium potatoes, peeled and cubed

2 cups frozen corn

2 cups chicken broth

2 ribs of celery, sliced

2 carrots, peeled and sliced

1/2 t garlic powder

1/2 t onion powder

1/2 t salt

1/4 t pepper

1 1/2 cups whole milk

2/3 cup cheddar cheese

1 t minced fresh parsley


In a large saucepan or soup pan, brown the sausage or ham. Remove and set aside. In the same pan, combine broth, potatoes, corn, celery carrots and seasonings. Bring to a boil.

Reduce the heat, cover and simmer for about 15 minutes or until the veggies are tender. Add the milk, cheese, parsley and sausage back in. Stir until the cheese is melted and the soup is heated through.

Serve up and enjoy!
