Southwest Chicken Casserole

Oh wow! This was fantastic! If you’re looking for something easy, where you can stir everything together and bake... this is for you! So good, I am sure everyone in the family will love this!


Here’s what you need:

1 to 1 1/2 lb chicken breast or chicken breast tenderloins, raw, cut into 1 inch pieces

1 1/2 cup, UNCOOKED brown Minute Rice ( white Minute Rice will work too)

1 1/2 cup chicken broth

1 15 oz can black beans, rinsed and drained

1 15 oz can whole kernel corn, drained

1 16 oz jar salsa..I used chunky (your choice of heat level)

1/4 cup chopped fresh cilantro

1/2 medium onion, finely chopped

1/2 t paprika

1 t ground cumin

1 t chili powder

2 t garlic powder

1 1/2 cup Colby Jack cheese, shredded

Optional garnishes: sour cream, fresh cilantro, salsa, green onion


Preheat oven to 375. Place all ingredients in a long casserole dish, stirring well, adding in only 1/2 cup of the cheese. COVER with foil tightly and cook for 50 minutes. Uncover and top with the remaining cheese. Bake UNCOVERED for 10 minutes more. Allow to rest a few minutes before serving. Enjoy!
