Sweet and spicy chicken thighs! These were so juicy and delicious...and super easy! Pour a quick sauce over the chicken and bake.. that’s it! Perfect for a night like tonight!
6 boneless, skinless chicken thighs
salt to taste
1/2 t paprika
1/2 cup lower sodium soy sauce
4 T honey
1 t minced garlic
1 t sambal oeleck (chili paste)
juice of 1/2 lemon
Preheat the oven to 425. Sprinkle the chicken thighs lightly with salt and the paprika. Heat a teaspoon of olive oil in a skillet and quickly brown the chicken on the top side to get good color. Place the chicken in a baking dish. Mix the rest of the ingredients together and pour it over the chicken . Bake uncovered for 20 minutes on 425, then about 20 more minutes on 450. Baste the chicken with the sauce 2-3 times during cooking time. The sauce gets thicker as it cooks. Allow it to rest a few minutes before serving. Pour the sauce over it to serve. Yum!
