Turkey Curry

Want a delicious and unique way to use that leftover turkey? This is it! I made this tonight and it was fantastic! If you have eaten all your turkey, never fear, you can use a rotisserie chicken instead! Enjoy!


Here’s what you need:


1 T olive oil

1 medium onion, sliced

2 red bell peppers, sliced

1 green bell pepper, sliced

1/4-1/2 t red pepper flakes (to your taste)

3 cloves garlic, minced

1/2 t ground ginger

3 t garam masala

1 t yellow curry powder

1 lb or so leftover cooked turkey (or chicken) cut up

1 can petite diced tomatoes, drained

1 can coconut milk

salt and pepper to taste

Rice to serve it with


Heat the oil in a large skillet. Sauté the onion and peppers until soft. Add the garlic, ginger, garam masala, and curry. Sauté a couple of minutes more. Add the turkey, tomatoes, and coconut milk. Salt and pepper to taste. Allow to simmer about ten minutes. Serve with rice, or riced cauliflower. Yum!
