Want a delicious and healthy side dish for your Labor Day cookout? Try this wonderful Greek Salad packed with lots of flavor and lots of goodies, including protein from the chick peas! You’ll love this salad!
Here‘s what you need: (4-6 servings)
1 large or 2 small cucumbers chopped
2 cups cherry tomatoes, halved
2 cans chick peas, rinsed and drained
1/2 red onion, diced
1/2 cup black olives halved
1/2 cup kalamata olives halved
2 cloves garlic minced
2 T lemon juice
1/2 cup Italian dressing
3 T olive oil
1/2 cup feta cheese
Mix all ingredients together except the cheese. Cover and refrigerate at least two hours. Just before serving, sprinkle the feta on top and lightly toss! Enjoy!
