Mediterranean Grilled Shrimp



This is one of the best shrimp dishes I have ever had! I started with jumbo shrimp fresh from the Gulf I got at Gulf Coast Connection, a local seafood market. I simply marinated it for about 15 minutes in a flavorful fresh marinade and grilled it on skewers. I served it with a mediterranean salad with crumbled goat cheese. OH MY!! What a scrumptious dinner! You will definitely want to try this very soon......seriously.

Here's what you need:

1 to 1 1/2 pounds large shrimp

3 Tablespoons fresh minced mint leaves

3 Tablespoons fresh minced basil leaves

Juice of 2 lemons

2 teaspoons minced garlic

1 teaspoon dried oregano

1/2 teaspoon mediterranean sea salt

1/4 teaspoon ground black pepper

1/3 cup olive oil

Peel and devein the shrimp, leaving the tail on. Evenly place them on skewers. (If you use wooden skewers, be sure to soak them in water first). Lay the skewers of shrimp in a long pan or baking dish. Mix all of the rest of the ingredients together in a bowl, whisking till blended.

Carefully pour the marinade over all of shrimp, evenly coating all shrimp on both sides. Refrigerate and let it marinate for at least 15 minutes. Preheat the grill to medium-high heat. After the shrimp has marinated, place carefully on the grill and grill for 3 minutes on each side until the shrimp is opaque and slightly pink. Serve with your choice of sides, but this salad was a very nice accompaniment! Enjoy!!
