You are going to love this easy twist on classic teriyaki marinated grilled pork chops with fresh pineapple! I made a healthier teriyaki sauce that tastes better than store bought, and I know what all is in it! I used it to marinate the pork chops then after removing the chops from the marinade, I put it in a saucepan and thickened it slightly with a little cornstarch and used it to baste the chops as they grilled. I also basted the fresh pineapple with it as well. These pork chops were just fantastic! They were tender and packed with flavor!
Here's what you need:
4-6 pork chops
1 fresh pineapple, peeled, cored, and sliced
1/3 cup fresh pineapple juice
1/3 cup low-sodium soy sauce
3 T honey
2 T rice wine vinegar
1 clove garlic, minced
2 t cornstarch
3 T water
Combine the pineapple juice, soy sauce, honey, vinegar, and garlic in a bowl. Place pork chops in a long baking dish and pour the marinade mixture over the chops. Turn to coat well. Cover and refrigerate for about two hours, turning the chops a couple of times during this process. When ready, remove the pork chops from the marinade and pour the marinade into a sauce pan. Heat up the marinade. Mix the water and cornstarch together and whisk into the hot marinade until thickened. Use this to baste the chops while you grill them. Grill the chops on medium high heat, basting several times with the sauce. Place the pineapple slices on the grill and baste them with the sauce. Cook the pork chops until they reach a temperature of 145. Serve with the fresh pineapple slices. We really enjoyed these flavorful pork chops! I know you and your family will too!
