Cilantro Lime Grilled Shrimp

This lime and cilantro marinade is perfect for juicy shrimp! They grill up fast with big flavors! This is so healthy and fresh, and just perfect for a summer dinner.

I skewered the shrimp along with lime wedges and brushed them with the marinade a couple of times and let it sit for about 15 minutes before grilling them. I served this with brown rice. The grilled limes were delicious squeezed on the shrimp!

Here's what you need:

1 pound uncooked shrimp, peeled and deveined.

2 limes

1/3 cup chopped cilantro leaves

1 jalapeno pepper, seeded and minced

2 T olive oil

3 cloves garlic, minced

1/4 t salt

1/4 t ground cumin

1/4 t ground black pepper

Skewer the shrimp and wedges of one of the limes. Combine the zest and juice of the other lime, and all the other ingredients in a bowl. Brush this marinade mixture over the shrimp skewers,turning to get both sides. Apply the marinade generously, ( I did two coats). Let the shrimp and lime skewers sit for about 15 minutes. Preheat the grill to medium heat. Grill the shrimp until the shrimp is pink, about 2-4 minutes per side. This is a light and healthy meal that I know the whole family will enjoy!
