This pork loin is seriously good stuff! It is fall-apart tender and so good with the honey glaze. You are going to love this super-easy, delicious dinner. The whole family will. I used a pork loin for this recipe, but you can also use a pork tenderloin as well. The sauce is very easy to throw together and cooks along with the pork. You thicken it at the end right before serving and you have a fantastic dinner. It would be great for a Sunday, or anytime!
Here's what you need:
1 Pork Loin ( 3-5 pounds)
For the Rub:
1 t olive oil
2 t each of paprika and thyme
1 t each of garlic powder and onion powder
1/2 t cayenne (optional)
1/2 t pepper
1 1/2 t salt
1 T olive oil ( to brown the pork)
For the Sauce:
3/4 cup honey
1/3 cup butter
5 cloves garlic minced
1/4 cup apple cider vinegar
1/2 t salt and pepper each
Thickener:
1 T cornstarch
1/3 cup water
Rub pork loin with the 1 t oil and mix the rub ingredients together and sprinkle all over the pork, patting it to stick to the pork. Heat the 1 T oil in a large skillet over medium heat. Add the pork and sear it on all sides until it is golden brown. Place the pork in the slow cooker. Rinse and wipe out the skillet. Add the butter to melt. Add the garlic and cook for a minute till it is golden. Add the rest of the ingredients for the sauce, whisk together and simmer for a minute. Pour this over and around the pork in the Crock Pot. Cook on high for 4-5 hours, or 6-7 hours 0n low, or until very tender. Remove the pork and put it on a serving platter. Cover with foil to keep warm. Pour the sauce that is in the crock pot into a saucepan. Over medium heat, stir in the cornstarch and water mixed together until it is thickened. Slice pork into thick slices and pour the honey sauce over it to serve. DELICIOUS!
