Pistachio Crusted Salmon



I love this scrumptious way to serve salmon! I made an easy crumble of pistachios with a little panko crumbs and topped salmon that had been drizzled with a honey, lemon and dijon. How can it not be delicious!?

I can never get tired of salmon!

Here's what you need: (to serve 4)

4 salmon filets

salt and pepper to taste

lemon juice ( from one lemon)

lemon zest ( from one lemon)

2 T dijon mustard, or course grain mustard

2 T honey

1/2 cup pistachios

2 T panko bread crumbs

1 1/2 T olive oil

Preheat oven to 400. Line a baking sheet with foil. Place the salmon on the foil lined sheet and salt and pepper to taste. In a small bowl, mix together the lemon zest, lemon juice, mustard and honey. Spread this mixture over each piece of salmon. Chop the pistachios coarsely in a food processor then stir in the panko bread crumbs and the olive oil. Spread the pistachio mixture over each piece of salmon and lightly press to make it stick. Bake about 12 minutes or to your liking. The pistachios should be golden. Let the salmon rest about five minutes when it is done. Enjoy!
