Do you want to make a healthy, hearty and yummy supper in about 30 minutes? This is it! I simply layered sliced sweet potatoes, onions, and turkey smoked sausage in a cast iron skillet, and put it in the oven. That is it! It was so delicious and satisfying. It is a quick supper for a busy night. This would also be a great meal prep idea to make ahead.
Here's all you need: ( to serve 4)
4 medium sweet potatoes sliced thin
1 onion sliced thin
13 oz. all natural turkey smoked sausage, sliced
1 T olive oil
Salt and pepper to taste
1 1/2 t paprika
1 1/2 t Italian seasoning
Fresh flat leafed parsley to garnish
Preheat the oven to 400. Coat the bottom of a cast iron skillet or long casserole dish with cooking spray. Layer with the sliced sweet potatoes, onions and then the sausages. Sprinkle with the seasonings and drizzle evenly with the olive oil. Cover with foil. Bake covered for about 25 minutes or until the sweet potatoes are soft. Uncover and continue to bake for a couple minutes more. Sprinkle with the parsley to garnish. This is a quick and hearty meal!
