Slow Cooker Honey Apple Pork Tenderloin



I've said it before and I'll say it again....It's really hard to beat pork and apples! They just go together so well and this recipe makes them both the star! Add in the sweetness of honey and the savory of the pork and onions, it's just perfect! Not the mention you can get this in the Crock Pot and it does the rest! I quickly browned the pork before putting it in the Crock Pot and I think that makes a huge difference. I added a few ingredients, along with some apples and onions and served it on top of sauteed cabbage. You could serve it with any side you would like, but the cabbage was great with it!

Here's what you need:

1 2-pack of pork tenderloin

1 T olive oil

salt, pepper and paprika to taste

3/4 cup chicken broth

1/2 cup apple juice

1 t minced garlic

1 t ground mustard

3/4 t salt

1/4 t black pepper

1 t cinnamon

3 T honey

1 T brown sugar

3 apples cut in 1/2 inch wedges

1 onion cut in wedges

1/4 cup cornstarch

Heat the oil in a large skillet. Rub the tenderloins generously with salt, pepper and paprika. Brown on all sides in the skillet. Place the tenderloins in the Crock Pot. In a bowl, mix the broth, apple juice, garlic, salt, pepper, honey, mustard, brown sugar and cinnamon together. Place the apples and onion wedges around the tenderloin in the Crock Pot. Pour the honey mixture on the pork and apples and onions. Close the Crock Pot and cook on low for about 4-5 hours. When the pork is done remove it and place in a serving dish or baking dish. Turn the Crock Pot up to high. In a small bowl mix the cornstarch and about 3 T water together and add it to the apple mixture to thicken. Pour this around and on the pork to serve. YUMMY!
