Easy Cajun Shrimp Tacos



How about a super easy, super quick, tasty dinner of Cajun Shrimp Tacos? This came together in less than 30 minutes and it hit the spot! I seasoned the shrimp with Slap Ya Mama Cajun seasoning and quickly grilled them. I toasted some whole wheat tortillas, mashed some avocados , sliced some limes and we were good to go! Just in time to watch the UK game! Go Cats!

Here's what you need: (adjust amount according to how many you are serving)

Medium or Large Raw Shrimp, peeled and deveined, tail off

Slap Ya Mama Cajun Seasoning

Olive oil

Whole wheat, or corn tortillas

Avocado, mashed and seasoned with a little salt

Roma tomatoes, chopped

Cilantro leaves

Limes sliced in wedges

Queso Fresco cheese, crumbled

Red onion, chopped

Heat up your grill. Thread the shrimp on skewers. Brush a little olive oil on the shrimp on both sides then sprinkle the Cajun seasoning on them. Grill for a couple of minutes on each side or until done.

To assemble tacos, toast the tortillas in a hot skillet or on the grill. Spread some of the mashed avocado on one half of the tortilla. Add shrimp, tomatoes, cilantro, onion, and cheese crumbles. Serve with a lime wedge. Enjoy!
