Sizzling, cheesy, flavor-packed fajitas loaded with big yummy shrimp...now that is what I call a terrific weeknight dinner! I did this all in one skillet and honestly, no need for tortillas either if you want to make it low carb! This was perfect just like this! I used my own fajita spice blend and I will share that easy recipe with you. I really think my spice blend makes the difference! You can serve with this with your choice of sides, such as, sour cream, pico or guacamole! Enjoy this easy dinner soon!
Here's what you need (to serve 4)
1 lb medium or large shrimp, raw, deveined, peeled and tails off
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow or orange bell pepper, sliced
1 large onion, sliced
1 T olive oil
1/2 t chili powder
1/2 t paprika
1/2 t garlic powder
1/2 t cumin
1/2 t salt
1/4 t oregano
1/8 t black pepper
4-6 oz shredded Monterey Jack cheese
(Optional) tortillas for fajitas
Mix the chili powder through the black pepper ( 7 ingredients) together in a small bowl. This is the fajita spice blend. Heat the oil in a large skillet. Saute the peppers and onions , along with half of the spice blend until tender., on medium - high heat. Add the shrimp with the rest of the spice blend and saute until they are pink and cooked through. Sprinkle the cheese on top to melt. They are ready to enjoy!
