(Air Fryer) Pork Tenderloin "Stir-Fry"


If you love a good stir-fry, and you love a quick meal made in your air-fryer, this is it! I put all the ingredients for this delicious pork tenderloin stir-fry in my air fryer and let it work it's magic! I thickened the sauce a little at the end and it was ready to serve! You will love this!


Here's what you need: (3-4 servings)


1 pork tenderloin, cut into one-inch pieces

4-5 cups broccoli florets

1 red bell pepper, diced


Sauce:

1/4 cup lower sodium soy sauce

3 T honey

1/2 t minced garlic

1/2 t grated ginger

1/4 t red pepper flakes

1 t sesame oil


1 T cornstarch plus 3 T water to thicken


Place the pork tenderloin, broccoli, and red bell pepper in a bowl. In a small bowl whisk the ingredients for the sauce together. Pour the sauce over the pork and vegetables and stir well to coat. Place all of this in the air fryer. Cook on 400 for 8 minutes. Shake or stir then cook another 5 minutes. It is ready if the pork has reached an internal temperature of at least 145. Remove the pork and vegetables and place in a serving dish. Pour the sauce into a small saucepan. Heat it up on the stove. Add the cornstarch mixed with water to the sauce. Stir until it is slightly thickened. Pour this over the pork and vegetables, and stir to coat. Serve over cauliflower rice or brown rice. Sprinkle with toasted sesame seeds if you would like! Enjoy!
