Cedar Citrus Salmon with Fresh Corn Salsa



This is absolutely a taste of summer! I seasoned the salmon with one of my favorite pre-made spice blends, McCormick Cedar Citrus Seafood seasoning and grilled it. I topped it with a mixture of fresh sweet corn, black beans, avocado and a few other fresh goodies to make a crisp/tender salsa. You cannot skip this one! It was enjoyed by the whole family! There are lots of big flavors going on here.....try this for your next special dinner!


Here's what you need for 4 servings:


4 salmon fillets

McCormick Cedar Citrus Seafood seasoning

Kernels from 3 -4 fresh ears of sweet corn

1 can black beans, drained and rinsed

1 red bell pepper, diced small

1/4 cup red onion, diced small

1/4 cup fresh cilantro,chopped

1 avocado, peeled and diced

1/4 cup Italian salad dressing

salt and pepper to taste

Juice of one lime


Simply season the salmon fillets with the McCormick seasoning. Preheat the grill.

Mix all the rest of the ingredients and set aside, Grill the salmon about 5 minutes per side or until it is flaky but not overcooked. Top the cooked salmon with the salsa to serve along with lime wedges if you would like. Enjoy this easy, summer-time dish!
