This was the best dinner I’ve made lately! I knocked it out of the park with this one! So easy, you make a quick seasoning blend and toss your sweet potatoes with it, rub it on the pork tenderloin and roast it all together on one sheet pan, lined with foil for easy clean up ... and BAM! Beautiful, delicious dinner on your table!
Here‘s what you need: ( about 6 servings)
1 T olive oil
2 pork tenderloins ( about 2 lbs or so)
4 sweet potatoes, peeled and cut into one inch cubes
2 t chili powder
1 t salt
1/2 t cinnamon
1/4 cup brown sugar
Preheat the oven to 400. Mix the last four ingredients together in a bowl. In another bowl place the sweet potatoes, drizzle with part of the oil and sprinkle with the seasonings, stir well to coat it all....RESERVING 2T of the seasonings for the pork. Line a baking sheet with foil and place the sweet potatoes all around the edges making room to place the tenderloins in the center. Brush the pork with the remaining oil and rub on the rest of the seasonings. Bake at 400 for 30 minutes or until the pork reaches an internal temperature of 145 in the fattest part. Let it rest a few minutes then slice and serve!
