Healthy Apple Crisp

Fall means yummy food! Fall also can mean apples! Try this delicious healthier version of an apple crisp! Crunchy oats and nuts on top of some yummy apples sweetened with a little pure maple syrup! Delish! Here‘s what you need:

4 cups apples, peeled, cored and cut into 1/4 inch slices ( I used Honeycrisp)

1 T coconut oil, melted

1/2 t ground cinnamon

1/4 t ground ginger pinch of salt

Crisp topping:

1 cup old-fashioned oats

1/2 t ground cinnamon

1/4 t ground ginger

1/4 t ground nutmeg

1/3 cup chopped pecans

1 1/2 T pure maple syrup

2 T coconut oil (Not melted) pinch of salt

Preheat oven you 350. Spray a 8x8 baking dish with cooking spray. Mix the first five ingredients together and place in the baking dish. Now mix the crisp topping ingredients together well and layer on top of the apples. Bake COVERED with foil for 20 minutes. Then bake uncovered for another 10-20 minutes or until the apples are fork tender. Allow to cool a minute or two. Enjoy warm!
