Time to fire up the grill and serve up these delicious Honey Marinated Pork Chops! I made an easy marinade of honey, soy sauce, olive oil and apple cider vinegar. I marinated the chops in it, but I reserved a little of it for the sweet potatoes and popped them in the oven to roast. The combination was so good! Simple and yummy! Isn't that what we need right now?
Here's what you need:
6-8 pork chops (bone-in or boneless)
salt and pepper to taste
4 sweet potatoes, peeled in cut into 1 inch dice
Marinade:
1/2 cup honey
4 T soy sauce
4 T olive oil
1 T apple cider vinegar
Mix the ingredients for the marinade. Reserve about 1/4 cup of it for the sweet potatoes. Place the pork chops in a long baking dish. Salt and pepper both sides lightly. Pour the marinade over the chops, turning them to coat both sides. Cover and refrigerate 1-2 hours. About 35 minutes before you serve the chops, preheat the oven to 400. Stir the reserved marinade with the sweet potatoes and spread onto a baking sheet. Roast at 400 for 30 minutes, stirring a time or two during cook time. Cook until they are fork tender.
When the chops have marinated, preheat the grill to high heat and sear the chops for 2-3 minutes per side to get grill marks. Turn the heat down to medium to medium-high heat and cook another 5-7 minutes (depending on the thickness of the chops), turning a few times, until they reach an internal of 145. Serve the chops with the sweet potatoes. Enjoy!
