Italian Stuffed Mushrooms

It’s that time of year! Parties, entertaining, and potlucks! I will be sharing some ideas for holiday appetizers throughout the month. Today I am featuring these delicious stuffed mushrooms! These are a crowd pleaser for sure!

Here’s what you need :

16 oz whole baby Bella mushrooms

1/2 lb Italian sausage (regular or turkey), cooked, drained and crumbled

1 T olive oil

1/2 cup minced onion

1 t minced garlic

1/4 cup Italian bread crumbs

1 T dried parsley

3/4 cup shredded Parmesan cheese

Preheat the oven to 350. Remove the stems from the mushrooms to leave a hole in each mushroom. Place the mushrooms, hollow side up, on a baking sheet. Finely chop the mushroom stems. In a large skillet, heat 1 T of olive oil. Sauté the minced onion, garlic and minced stems until soft. Add in the cooked sausage, bread crumbs, 1/2 cup of the cheese, and parsley. Stir to combine well. Carefully stuff the mushrooms with the sausage mixture. Sprinkle the tops with the remaining cheese. Bake at 350 for 17-20 minutes or until cheese is melty. They are ready to place on a pretty platter and serve!
